This is not so much a recipe as a suggestion for your end of summer garden bounty. A nice, one pan Calabacitas á la Kim. I don’t really follow a recipe on this one.
Just sauté ANY veggies that you have along with onions and garlic in olive oil. I used Cube of Butter squash, bush beans, poblano and shoshito peppers, tomatoes and leftover Munson Farms peaches and cream corn from the night before. Near the end, I added 3-5 drops of the doTERRA Mexican Cuisine Blend (mixed into a dab of broth to help spread it around better) , then melted a couple handfuls of cheese over the top!
So simple and SO tasty and nearly everything came from our yard!
