My zucchini did very well last summer and I grated some and froze in canning jars for zucchini bread. But decided to thaw some for our dinner vegetable tonight.
Whether you call them timbales, fritters or latkes, they are great for dinner side dish. Or make tiny ones for dim sum with an Asian dipping sauce.
- 2 cups shredded zucchini
- 1 egg
- 2 Tbsp diced onion
- 2 Tbsp almond flour
- 4 drops doTERRA Lemon essential oil. blended into your egg mixture. (always make sure your EO has the FDA supplemental facts on the side before consuming)
- salt and pepper to taste
- Mix egg, salt and pepper and EO, then add zuchinni and flour.
- Saute large spoonfuls in good quality, mild high heat oil until lightly browned and crispy. I served with garlic chicken thighs. Can’t wait to do this with fresh squash next summer!
